Chicken wings or drumsticks cooked in a sweet spicy sauce for lunch, and then refrigerated – perfect for an al-fresco lunch on a hot summers day.

With a sweet, spicy sauce made with sriracha, mustard and soy sauce these wings are packed full of flavor and low in carbs. Simply preheat your oven to 400 degrees F and spray a sheet pan with cooking spray before adding the fully cooked wings to the pan. Toss the wings gently until they are fully coated in the tangy sauce, then pop them in the oven to bake until golden brown and crispy.

Ingredients

  • Cooking Spray
  • 5 lb chicken wings, cooked
  • 0.3 cup of sriracha sauce
  • 0.25 cup of butter
  • 0.25 cup of sucralose sweetener, granular
  • 2 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 0.25 tsp ground ginger
  • 0.25 tsp onion powder
  • 0.25 tsp salt

Instructions

  1. Pre-heat oven to about 400F.
  2. Spray a sheet pan with some cooking spray.
  3. Put sriracha, mustard, butter, sucralose, soy sauce, onion powder, salt and ginger in a saucepan and mix everything together. Cook over medium-high heat for about 5 minutes until everything is blended well.
  4. The cooked wings should be put in a big bowl that contains the sauce.
  5. Toss the wings gently until they are coated.
  6. Put them in the oven and bake for 5-10 minutes until the sauce becomes slightly thick.

“The chicken was so succulent but very sweet. Next time I will reduce the amount of sweetener put in. The recipe total time did not include the pre-cooking of the chicken which took me an extra 20 minutes (our recipe card is correct). I used drumsticks instead of wings and the recipe worked wonderfully. The recipe stated 20 servings. As a family of four, this was a substantial lunch for us. I’m going to have to mark this one down quite a bit as the sweetener flavor was over powering. I will be revisiting this recipe in the future to try it with less sweetener. A disappointing 2 out of 5 stars.”
