I made a quesadilla without using tortillas. The woven bacon made the top and bottom of the quesadilla, what an incredible invention.

Weaving bacon in a criss-cross pattern to create a layer of inter-woven bacon to be used as the top and base of this quesadilla. This quesadilla features an immense amount of crispy, salty bacon, grilled chicken, and creamy ranch dressing. Its like a delicious club sandwich without the carbs!

Why does keto limit carbs?

Keto diet is a low-carb, high-fat diet that involves drastically limiting your intake of carbs and replacing them with fat. This causes your body to go into ketosis – a metabolic process where it starts burning fat for energy instead of carbs.

While many people find success on the keto diet, it can also be tough to stick with. Some of the hardest parts are giving up your favorite carbs and learning how to cook without them. In particular, many people miss having bread in their diet.

What is “ranch” dressing named after?

Ranch dressing is a creamy, tangy sauce that is typically made from buttermilk, mayonnaise, herbs, and spices. It gets its name from the ranch-style properties of its ingredients – many people believe that this dressing originated on ranches in the American West, where it was used as a flavorful condiment for salads and other foods.

Ingredients

  • 20 uncured center-cut bacon strips
  • 2 cups sliced grilled free-range chicken
  • 0.25 cup ranch dressing
  • 0.5 cup shredded organic cheddar cheese

Instructions

  1. Preheat oven to 400F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Lay out 5 strips of bacon right next to each other on the sheet. One by one, weave the next 5 bacon strips onto the first layer in the opposite direction, creating a woven bacon square.
  4. Repeat this with the remaining 10 bacon strips to make a second woven bacon square next to the first. Bake for 30 minutes.
  5. Trim the bacon squares so they are about the same size and shape.
  6. Crumble any trimmed bacon and save for another receipe.
  7. Layer the grilled chicken over one bacon square, drizzle it with the ranch dressing, and sprinkle with the cheddar cheese.
  8. Top with second bacon square.
  9. Discard the used parchment and line the baking sheet with a new piece. Bake the quesadilla until the cheese melts, 5 to 10 minutes. Cut in half and serve.

“This was divine, the recipe only called for 4 ingredients contrary to the long list required for a typical club sandwich. It was so simple, yet the quesadilla packed so many contrasting and contrary flavors – the saltiness of the bacon and the creaminess of the ranch dressing. Finally, the finished dinner was a work of art to look at. I gave this recipe an incredible 5 out of 5! No improvements, just do what the recipe says”
