The Key for Keto recipe card is extremely simple for the, there does not seem much to do. The key is avoiding over-cooking the steak, and also having patience while warming the blue cheese sauce.

Will always chooses blue cheese sauce for his steak dressing when we eat out at a steakhouse. This is because I have an aversion to blue cheese, I do not fully understand it, how can something moldy be delicious to eat. So, I carried out some research to figure out the process so I might learn that its actually good for you. Turns out it is, and its full of protein. I did taste it and it was ok, Will loved it and said it was a mild blue cheese sauce, so I have not really encountered the full force of the “fromage-bleu”.

What is “filet mignon”?

Filet mignon is a boneless cut of beef taken from the small end of the tenderloin. It is considered one of the most desirable cuts because it is extremely tender, lean and full-flavored. Filet mignon can be cooked in many ways, including grilling, broiling, pan searing or roasting.

If you prefer not to use filet mignon, some alternatives include beef tenderloin, rib-eye steak and strip steak. Depending on the desired flavor and texture, any of these cuts can be just as delicious as a filet mignon. Rib-eye steaks are known for their intense beefy flavor, while strip steaks are a bit more lean and tender. For something even leaner, beef tenderloin is an excellent choice. All of these cuts can be cooked similarly to a filet mignon, making them great substitutes. No matter which cut you choose, make sure to season it with salt and pepper before cooking to bring out the best flavor.

Blue cheese is a type of cheese that has been inoculated with the cultures and bacteria commonly found in blue molds. This gives it its characteristic flavor and smell. When making blue cheese, the milk is heated to a certain temperature then cooled so that the bacteria can grow. Once grown, enzymes are added to break down proteins in the milk and create a creamy texture. The blue cheese is then aged for several weeks or months to develop its flavor. Blue cheese is an excellent sauce for steak because of its bold flavor and creamy texture. This combination provides the perfect contrast to the beefy taste of the steak, with just enough saltiness and tanginess to bring out the wonderful meaty flavors. The creaminess of the blue cheese also helps to coat the steak and create a delicious, luxurious feel in the mouth. Even better, its sharpness can help to cut through some of the richness of the steak, creating a great balance of flavor. All in all, blue cheese is an excellent accompaniment for steak that will make it even more delectable.

Ingredients

  • 18 oz filet mignon (cut into thin steaks)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 0.5 cup shredded onion
  • 1 cup heavy cream
  • 5.25 oz cubed blue cheese
  • 1 clove of garlic
  • 1 pinch of nutmeg
  • Salt and black pepper to taste

Instructions

  1. Take a grill pan and heat it at high temperature.
  2. Season the filet mignon steaks with some salt and black pepper.
  3. Cook the steaks in the grill pan until they begin to firm and become hot and pinkish in the center, approximately 4 minutes on each side if you prefer medium-done steaks. When they are done, put them aside.
  4. Mix the olive oil with the butter in another pan over medium high heat and let the butter melt; then add the onion.
  5. Cook and stir for about 5-7 min. until it’s browned.
  6. Add the heavy cream, the blue cheese, garlic, onion, nutmeg, and some black pepper.
  7. Reduce the heat to medium low, and continue stirring for about 3-5 more min. until the cheese is completely melted.
  8. Add some water to thin (if necessary).
  9. Pour the sauce over the steaks.

“Not sure about serving size. Will would devour all of them in one go if he had the chance. This worked out at about two slices per portion, if this were to serve 4 as the recipe suggests. This recipe is all about the cheese sauce. Obviously you need to cook the steak to your liking, and that is a skill in itself. Assuming you get the steak right, which we did – 2 minutes on first side, 60 seconds on the other (we like our steak red to pink) – then its all about getting the cheese sauce cooked nicely. This means do not burn! The main ingredient is the cream so this commands a low heat and some patience. Will absolutely loved this one, strangely only went with 4 out of 5 stars however. Go figure.
