Coconut Berry Smoothie

Yummy! –  raspberries and blackberries with coconut.

Raspberries and blackberries are an excellent source of vitamin C, and are available from the store all year round. When not in season they are available frozen. If you are using a Nutribullet for this recipe, which I highly recommend, ensure you use the larger 700ml blending cup, it just helps to circulate the ingredients better when blending.

Coconut milk comes in a variety of versions so always look for the full-fat option. If you can’t find the milk cartons, the coconut milk which you find in tins for the store cupboard will work just as well.

Are smoothies as healthy as eating?

Smoothies are a great way to get nutrients and vitamins, but they don’t always have the same benefits as eating food. They contain less fiber than whole fruits or vegetables, so you may end up gaining weight if you drink them excessively (especially if you swap out healthier foods for smoothies).

On the other hand, smoothies are often filled with so many different fruits and vegetables that they can give you a burst of energy or help to fight off disease. Overall, smoothies are a great addition to your diet – if you enjoy them! Just remember not to swap too many healthy foods for smoothies; keep eating whole foods in order to get the full range of vitamins and nutrients.

Coconut Berry Smoothie

Like a blast of the tropics, this coconut berry smoothie is rich with bursts of flavor from blackberries and raspberries which still smooth and creamy from the coconut milk.

Ingredients

  • 1 cup crushed ice, divided
  • 1 cup unsweetened, full-fat coconut milk
  • 1 tbsp coconut oil
  • 0.5 cup raspberries
  • 0.5 cup blackberries
  • 2 tbsp unsweetened coconut flakes

Instructions

  1. In a blender, place 1/2 cup of ice. Add the coconut milk, and the coconut oil. Blend to combine.
  2. Add the raspberries, blackberries, coconut flakes and remaining 1/2 cup of ice.
  3. Blend for 1 minute, or until smooth, and serve.
