Strawberry Spinach Smoothie

Strawberries and spinach are both very nutrient-rich foods. They’re packed with vitamins, minerals, antioxidants, and other important nutrients that have been shown to help reduce inflammation in the body and boost immune function.

In the summer months, I love to combine strawberries into a spinach salad.

So when I saw this strawberry spinach smoothie in the Keto Smoothies Recipe Book from Key For Keto, I knew I would love the taste… If strawberries are not in season locally when you are making this recipe, frozen berries will work perfectly. The advantage to frozen fruits and vegetables, think garden peas, is that they are picked in season and frozen within two hours of picking. This locks in the freshness and nutrients, they have literally been frozen in time. I did manage to use fresh strawberries in this recipe.

Top tip – Almond milk, an overnight success story…

I usually buy almond milk, but if I can’t find any in the store and have some whole almonds just lying around at home, I’m able to soak these in water overnight and simply blend in the morning. However, almond milk is so popular presently that I bet your bottom dollar you’ll be sure to find some at the store. No problemo!

Ingredients

  • 1 cup crushed ice, divided
  • 0.5 cup unsweetened almond milk
  • 2 cups fresh spinach
  • 0.5 cup strawberries
  • 1 tbsp coconut oil

Instructions

  1. In a blender, place 1/2 cup of ice. Add the almond milk, spinach, strawberries, and coconut oil. Blend to combine.
  2. Add the remaining 1/2 cup of ice.
  3. Blend for 1 minute, or until smooth, and serve.

“Nice flavors in this smoothie. Strawberries and the spinach combine well. Make sure you blend a little bit extra so it doesn’t come out lumpy. I felt it was a little on the watery side for a smoothie. You could say it’s more like a juice. Not bad. I rate this one 3 out of 5 stars.”
