This epic smoothie from Key For Keto is filled with green vegetables and smoothed out with buttery coconut oil.

This recipe called for three types of leafy green vegetables. My local store stocked kale and spinach but Swiss chard proved elusive so I doubled the amount of spinach which I can not imagine changed the taste too much. The chia seeds blended so well using the immense power of the Nutribullet blade.

Why are leafy green vegetables so good for us?

Rich, leafy, green vegetables are full of vitamins and minerals that our bodies need to function properly. This means they can help prevent or manage a wide range of health conditions, including cancer, heart disease, diabetes, and Alzheimer’s disease. Most leafy greens are also low in calories and high in fiber, making them an excellent choice for those trying to lose weight. The stalks of these vegetables tend to be fibrous and even when the Nutribullet blends them to a pulp, I find that the taste is not as fresh and sweet as when I just use the leaves.

What is so cheerful about chia seeds?

Chia seeds are a superfood that is gaining in popularity around the world. Chia seeds are high in protein and fiber, and they also contain healthy omega-3 fatty acids. These tiny little seeds don’t have much of a taste on their own, which makes them easy to incorporate into all kinds of recipes and dishes. To say chia correctly, simply pronounce the “ch’ as in “cheerful”!

Ingredients

  • 1.5 cups crushed ice, divided
  • 1 cup kale, tightly packed, cleaned, stalks removed
  • 1 cup spinach, cleaned, stalks removed
  • 2 tbsp coconut oil
  • 2 tbsp chia seeds
  • 0.5 cup water

Instructions

  1. In a blender, place 3/4 cup of ice. Add the kale and spinach. Blend to combine.
  2. Add the coconut oil, chia seeds, remaining 3/4 cup of ice, and water.
  3. Blend for 1 minute, or until smooth, and serve.

“This smoothie recipe tastes like freshly mowed grass which is actually really amazing. It feels so good drinking this, the consistency is so smooth. The recipe did make 2 servings though the glasses were only about 2/3 full – so although a smaller amount, they did pack a punch of flavor in the space. I rate this 4 out of 5, really enjoyable and felt incredibly healthy.”
