Look no further for a delicious keto meatball recipe. I had always associated meatballs with Italy, and they are a perfect keto meal. I was surprised to find out that meatballs have been popular in Asian countries for a long time.

Meatballs have been a popular dish throughout many regions in Asia for centuries, although the flavour and style of the meatball varies from country to country. In China, for example, they are known as “rouwan” or “wonton”, while in Japan they are called “niku-maki”. In Thailand, meatballs are known as “khanom jeeb”, and in Vietnam, they are called “thit bo vieng”. Each country adds its own unique twist to the classic dish by using different spices, herbs, sauces, and textures. For example, China often uses pork and shrimp in their meatballs while Japan adds soy sauce for flavour.

What is rice wine vinegar?

This keto meatball recipe contains rice wine vinegar. But what is rice wine vinegar, I hear you say, and why is it in this recipe? I thought perhaps its going to be similar to normal vinegar but using rice instead of barley, oats, apples or grapes. I was correct! Rice wine vinegar is a type of vinegar made by fermenting rice. It originated in Asia, where it has been used for centuries as an important ingredient in many dishes and beverages. Rice wine vinegar is characterized by its mild flavour and acidic profile, making it perfect to add zing to salads, marinades, stir-fries and other dishes. It is also a popular ingredient in many Asian sauces, such as teriyaki and sweet-and-sour. This is why this keto meatball recipe has rice wine vinegar as one of it’s ingredients.

Could I make rice wine vinegar at home?

Making rice wine vinegar at home is possible but can be time consuming and require patience. The process involves combining cooked rice with an enzyme called “koji”. This mixture then needs to ferment for several weeks to several months. During fermentation, the rice gradually breaks down and becomes acidified by bacteria and yeast. Once finished, the mixture is strained to remove any solids, then bottled and ready to use.

No-cook sauce

A simple, cook free sauce to pile over the keto meatballs. I do not like the taste of artificial sweetener so I tend to leave it out, and I still am blessed with a super tasty sauce that really did not need the sweetener added.

Ingredients

  • 1 lb ground beef
  • 2 green onions, sliced
  • 1 tsp garlic, minced
  • 0.5 tsp ginger, minced
  • 2 tsp soy sauce
  • 2 tsp olive oil
  • 0.5 lime, juiced
  • 2 tsp chili paste
  • 2 tsp erythritol sweetener
  • 1 tbsp rice wine vinegar
  • 1 large egg, beaten
  • 2 tbsp sugar free ketchup
  • 1 tbsp chili garlic paste
  • 1 tbsp lime juice
  • 1 tsp olive oil
  • 1 tsp rice vinegar
  • 1.5 tsp soy sauce
  • 1 tsp erythritol sweetener

Instructions

  1. Preheat oven to 400F.
  2. Combine all meatball ingredients and mix well with your hands.
  3. Form into 16-20 meatballs and place spread apart over a foiled baking sheet.
  4. Bake for 12-15 minutes or until internal temperature reaches 165F.
  5. While they are baking, combine all ingredients for the sauce and mix well.
  6. When they come out of the oven, spoon a small amount of sauce over each meatball and garnish with spring onion.

“The smell coming from these meatballs when we took out of the oven was divine. The star of the show here is the ginger and lime. They come across as the dominant flavour giving this dish a real oriental feel to it. I managed to get 16 meatballs out of the mixture, which is 4 meatballs each according to the recipe portion sizes. However, with a bit more skill you may be able to get the 24 meatballs suggested.

I gave this recipe a 5 out of 5 stars. They only criticism is the use of sweetener. You may have read in my other recipe reviews where sweetener is used that we are not big fans. If you are not careful it can leave a strong and unpleasant after-taste in your mouth. I can tell this dish had sweetener in the ingredients. It’s something that I have picked up because we are cooking and reviewing so many of these keto dishes. If I were to do this dish again, I would halve the amount of sweetener, or I may even remove it completely. Still gets a 5 out of 5 stars though. Well done.

Consider turning meatballs over halfway for an even browning.”
