When living on a keto diet, I find it most challenging being on the go and still making good choices that will keep me full and healthy throughout the day. These scones are great on the go and can be made with any toppings of your choice or have on hand.

This recipe made super simple scones without the massive carbs from traditional scones. What surprised me was how easy the dough was to roll out, and the slight sweet taste of the coconut flour. I have never used coconut flour before so here is some interesting information…

Coconut flour is made from the white flesh of a coconut, first shredded and then dried. The dried coconut meat is ground into a fine powder resulting in a gluten-free option for baking and cooking. Coconut flour is high in dietary fiber, which assists with digestion and prevents constipation. It also provides essential vitamins and minerals such as iron, magnesium and phosphorus. Coconut flour can be used as a substitute for wheat flour in baking and cooking recipes. It has a light flavor and can be combined with other flours to create delicious desserts like cakes, muffins and cookies. Additionally, it adds a hint of sweetness to dishes such as pancakes or waffles. Because coconut flour is gluten-free, it is a great option for those with gluten sensitivities or allergies. It can also be used to replace wheat flour in recipes to create delicious meals and snacks. With its health benefits, subtle sweetness and versatility, coconut flour is a great addition to any kitchen pantry!

If I lived near coconut trees, could I make coconut flour?

Coconut flour is easy to make at home. First, start by selecting ripe coconuts with a brown husk for the best results. Peel and de-shell the coconuts and use a food processor to grate the white flesh into small pieces. Spread the grated coconut onto a baking sheet or tray and bake in the oven at a low temperature for about an hour, stirring occasionally. Once the coconut is dry and golden, remove it from the oven and let cool before transferring to a blender or food processor. Blend on high speed until it reaches a fine powdery form. Store in an airtight container and use as needed for baking and cooking recipes.

Why do ham and cheese go so well together?

Ingredients

  • 0.25 cup coconut flour
  • 2 cup almond flour
  • 0.5 tsp xantham gum
  • 1 tbsp baking powder
  • 0.5 tsp garlic powder
  • 0.25 cup heavy cream
  • 1 large egg
  • 1 large egg white
  • 0.5 cup diced ham
  • 1.25 cup mozzarella cheese, grated and divided
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tbsp fresh chives chopped (optional)

Instructions

  1. Line some parchment paper on a large baking sheet while preheating the oven to 325°F.
  2. Prepare a large bowl where you will mix the coconut flour, almond flour, baking powder, xanthan gum (if using) garlic powder, and dried oregano. Whisk together and occasionally add salt to suit your taste.
  3. Mix in 1 cup of grated cheese and stir again.
  4. Add the remaining ingredients such as egg white, egg, heavy cream, ham and stir well until everything is well combined.
  5. Gather the dough together by hand and place on a flat surface covered by parchment paper.
  6. Press the dough until it forms a 10 by 8 inches rectangle. Top with the remaining grated cheese.
  7. Slice into squares, making about 6 pieces. Cut these squares in half, diagonally slicing them to form two triangles. Arrange the scones evenly in the parchment-lined baking sheet.
  8. Put in the oven and bake for 18-20 minutes. When the dough is golden brown and firm to touch, remove and allow to cool before serving. Top with chives and butter (optional)
