A weakness for Greek flavours – feta and zucchini

Feta and zucchini have a natural affinity for each other in the kitchen. Feta, a brined or cured cheese made from sheep’s milk or goats’ milk, is salty and creamy with a slightly sour taste. Zucchini, also known as courgette to the British which is French for small cucumber, is mild in flavour but becomes sweet when cooked. This combination of sweet and salty, plus the creamy texture of feta, makes for a winning flavour combination. The two ingredients also have complementary textures which helps to create an interesting dish with contrasting flavours and textures. Zucchini is also a healthy vegetable that provides vitamins and minerals, making it an ideal partner for feta cheese.

Ingredients

  • 2 medium zucchini
  • 0.5 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp ground cumin
  • 0.5 cup sliced olives
  • 2 tbsp chopped mixed herbs (such as mint, oregano, and dill)
  • 2 tbsp ghee or lard
  • Salt to taste

Instructions

  1. Use a julienne peeler or a spiralizer to create thin “noodles” from the zucchini.
  2. Sprinkle them with salt and let sit for 10 minutes.
  3. Use a paper towel to pat them dry.
  4. Place the zucchini, Parmesan cheese, eggs, cumin, feta, olives, and herbs in a bowl.
  5. Combine well and create small patties from the mixture and fry them in a hot pan greased with the ghee, about 2 to 3 minutes per side. (Do not flip them too early otherwise the patties will break.) Alternatively, you can drizzle the patties with melted ghee and bake them in an oven preheated to 400°F for 15 to 20 minutes.
  6. Once cooked, serve immediately with full-fat yogurt or as a side with meat, or let them cool completely and store in the fridge in an airtight container for up to 3 days.

“Tricky. Getting all the water out of the zucchini and gauging how big the pattie should be. The recipe stated 9 patties, I managed to make 8.

“I’m not one for fiddly cooking too often, so every now and again is okay. This one is fiddly because of the draining. I fried 4 at a time. The first batch, I left them 30 seconds too long and they caught…check out the video and you can see what happened.
