A simple egg scramble inside a bacon cup is topped with cheese in this savory, compact meal made in a cupcake pan. I enjoy using this basic recipe and adding different cheeses or toppings, like mozzarella and basil or onion and Cheddar.

Bacon forms the cup for these egg and cheese delight. The cheese fluffs up like a souffle, so decadent for Keto – an amazing dinner from Key for Keto.

This recipe did not take long to prepare, no chopping, just a little grating and whisking. Then the cups are put in the oven – I only baked mine for 28 minutes as I know my oven very, very well –  the recipe did say 35 minutes or until golden brown. Two of these did fill me up and I will definitely make these again. There was about 1/5th of egg mixture left over after I had filled the cups so perhaps I will only use 3 eggs next time – experimental!

What is Monterey Jack Cheese?

Monterey Jack cheese is a semi-hard American cheese which originated in Monterey, California. It has a mild flavor and slightly salty taste, often used as a melting cheese or for snacking. Although the original Monterey Jack was created by early Spanish settlers in the late 1700s, it didn’t gain its current name until the mid 1800s. It is made from a combination of cow’s milk, butter and salt, with different variations including jalapeno peppers, garlic or herbs. Monterey Jack has become popular worldwide, often used in Mexican dishes such as tacos, quesadillas or nachos. It can also be added to gratins and soups for additional flavor. It is an excellent source of protein and calcium, making it a great addition to any diet.

What are the rules about naming your cheese after a geographical location, for example, Cheddar, Parmesan or Monterey Jack?

You may be able to produce a cheese with a geographic designation without a licence. However, you will have to ensure that the cheese meets certain criteria in order to be able to use the geographic designation on its label. According to European Union regulations, a cheese may only be designated with a geographic name if it is produced in a specific geographical area and made according to traditional methods that are particular to that region. If a cheese does not meet these criteria, it is not allowed to use a geographic name on its label. Therefore, if you would like to produce a cheese with a geographic designation, you should ensure that your product meets all of the relevant criteria and obtain approval from the appropriate regulatory body before producing or selling it. Doing so will help ensure that your cheese is legally eligible to use the geographic designation and will also protect it from potential trademark infringement claims.

Ingredients

  • 6 bacon slices, divided
  • 4 eggs, beaten
  • 0.5 cup heavy whipping cream
  • 0.25 tsp salt
  • 2 large pinches of black pepper
  • 0.5 cup Monterey Jack cheese, shredded

Instructions

  1. Preheat the oven to 350°F.
  2. Wrap one bacon slice inside a cupcake tin around the edges, so it covers the sides of the tin. Repeat with three more slices in three more tins.
  3. Cut the remaining two bacon slices into 2-inch pieces. Place 2 to 3 bacon pieces at the bottom of each bacon￾wrapped cupcake tin so each is fully covered.
  4. In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. Pour the egg mixture evenly into the bacon-wrapped tins. Cover each with 2 tablespoons of cheese.
  6. Carefully place the cupcake pan in the oven to avoid spillage.
  7. Bake for 35 minutes or until golden brown.

“This was delicious, I will cut straight to it, a 5 out 5. The egg scramble was moist and fluffy, the salty bacon held the base of the cup and the cheese fluffed up like a souffle. I did serve mine with a splodge of low-carb, low-sugar ketchup. Two of these did fill me up for dinner, and I am realizing that I don’t need as big a serving at dinner sitting as I used to. Really happy with this one.”
