Three Berries Smoothie

A smoothie packed full of superfoods, high in fiber, low in GI from the team at Key For Keto.

I chose three types of berries which I had in my freezer as I made this smoothie in November and locally grown fresh berries were not available at the store. The recipe called for almond milk, vanilla and coconut oil to be added to the berry mixture. I made this recipe for my lunch and the smoothie did fill me up until dinner time.

Fresh v frozen berries

Fresh berries are the ultimate luxury, picked and eaten within an hour. However, most of population don’t have this splendour but don’t fear – frozen berries are just as indulgent. Berries are picked on farms by fruit-pickers, then frozen and packed within two hours, sealing in the freshness and nutrients. So I am in delight when I pick up these frozen packs of opulence from the store.

Ingredients

  • 1 cup crushed ice, divided
  • 0.5 cup unsweetened almond milk
  • 1 tbsp coconut oil
  • 0.5 cup blueberries
  • 0.5 cup raspberries
  • 0.5 cup blackberries
  • 0.5 tsp pure vanilla extract

Instructions

  1. In a blender, place 1/2 cup of ice. Add the almond milk and coconut oil. Blend to combine.
  2. Add the blueberries, raspberries, blackberries, vanilla and remaining 1/2 cup of ice.
  3. Blend for 1 minute, or until smooth, and serve.

“I used frozen berries as I always have some to hand in the freezer compartment. Raspberries, in particular, I never buy fresh as they also tend to crush under their own weight. This recipe was like runny jam, and that’s a great thing. It was smooth and tasted of summer fruits. This is a smoothie that you do want to drink straight away – some smoothies loose their smoothness as the layers settle and separate. I rated this as 5 out of 5 – a sweet, filling replacement for a meal.”
