Pizza Ferittata

Ingredients
- 1 tbsp ghee or lard
- 1 small white or yellow onion, chopped
- 4 oz (112g) fresh or cooked spinach
- 6 large pastured eggs
- 0.3333333333 cup sugar-free marinara sauce, divided
- 0.25 cup grated Parmesan cheese, divided
- 1 cup grated mozzarella cheese, divided
- 2 medium tomatoes, sliced
- 0.25 cup sliced olives
- 1 tbsp extra-virgin olive oil
- Fresh basil
Instructions
- Grease a pan with the ghee and add the onion.
- Cook over medium-high heat for 2 to 3 minutes, or until fragrant.
- Add the spinach and cook for no more than 1 minute.
- Preheat the broiler. Crack the eggs into a bowl and beat with a fork.
- Add the marinara, grated parmesan, and mozzarella.
- Pour the egg mixture into the pan and lower the heat to medium-low. Cook until the top starts to firm up and the edges are turning opaque, about 8 to 10 minutes, with the lid on.
- Top with the reserved marinara and cheese, tomatoes, and olives.
- Place under the broiler for 5 to 7 minutes to crisp up the top.
- Let the frittata cool slightly and cut it into 6 pieces.
- Top with extra-virgin olive oil and fresh basil just before serving.
