Pizza Frittata

This simple frittata takes its inspiration from Margherita pizza except of course its low-carb and grain free.

Ingredients

  • 1 tbsp ghee or lard
  • 1 small white or yellow onion, chopped
  • 4 oz (112g) fresh or cooked spinach
  • 6 large pastured eggs
  • 0.3333333333 cup sugar-free marinara sauce, divided
  • 0.25 cup grated Parmesan cheese, divided
  • 1 cup grated mozzarella cheese, divided
  • 2 medium tomatoes, sliced
  • 0.25 cup sliced olives
  • 1 tbsp extra-virgin olive oil
  • Fresh basil

Instructions

  1. Grease a pan with the ghee and add the onion.
  2. Cook over medium-high heat for 2 to 3 minutes, or until fragrant.
  3. Add the spinach and cook for no more than 1 minute.
  4. Preheat the broiler. Crack the eggs into a bowl and beat with a fork.
  5. Add the marinara, grated parmesan, and mozzarella.
  6. Pour the egg mixture into the pan and lower the heat to medium-low. Cook until the top starts to firm up and the edges are turning opaque, about 8 to 10 minutes, with the lid on.
  7. Top with the reserved marinara and cheese, tomatoes, and olives.
  8. Place under the broiler for 5 to 7 minutes to crisp up the top.
  9. Let the frittata cool slightly and cut it into 6 pieces.
  10. Top with extra-virgin olive oil and fresh basil just before serving.
