Omelettes for breakfast have always been top of the list in our household at the weekends. This recipe is from Key for Keto and is a real treat.

Featuring eggs, heavy cream, and coconut oil, this satisfying meal is sure to keep you feeling full and energized throughout the day. To make it, simply whisk together the eggs with the heavy cream until smooth. Then, melt some coconut oil over medium-low heat and pour in the egg mixture. Cover your skillet with a lid, cook for 5 minutes until the eggs start to set, then use a spatula to fold the omelette and continue cooking for 5 more minutes.

  • 2 medium eggs
  • 1 tbsp heavy cream
  • 1 tbsp coconut oil

Instructions

  1. Whisk the eggs with the heavy cream until smooth.
  2. Melt the coconut oil over medium-low heat. Pour in the egg mixture then cover the skillet with a lid.
  3. Cook for about 5 minutes until the eggs start to set.
  4. Fold the omelette; put the lid back on then continue cooking for 5 minutes more.
  5. Use flat spatula to transfer the omelette onto a plate.
