Ingredients

  • 2 medium eggs
  • 1 tbsp heavy cream
  • 1 tbsp coconut oil

Instructions

  1. Whisk the eggs with the heavy cream until smooth.
  2. Melt the coconut oil over medium-low heat. Pour in the egg mixture then cover the skillet with a lid.
  3. Cook for about 5 minutes until the eggs start to set.
  4. Fold the omelette; put the lid back on then continue cooking for 5 minutes more.
  5. Use flat spatula to transfer the omelette onto a plate.
