What a luxurious thick and creamy soup, more like a pasta sauce. This was a surprising and tasty recipe from Key for Keto. I had never heard of Xanthan gum before…

Ingredients

  • 1 tbsp butter
  • 1 tsp garlic, minced
  • 1 tsp dried parsley
  • 1 stalk celery, chopped
  • 0.5 small onion, chopped
  • 90 g chopped dill pickle
  • 0.5 cup pickle juice
  • 1 cup heavy whipping cream
  • 3 tbsp olive oil
  • 0.5 tsp xanthan gum
  • 0.5 cup crumbled bacon (optional)
  • 0.5 cup cheddar cheese

Instructions

  1. In a deep pot, heat up the butter and minced garlic.
  2. Add in your parsley, celery, onions and chopped pickles, sauteing for 5 minutes.
  3. Pour in your pickle juice, chicken broth and heavy cream. Bring to a boil.
  4. In a separate smaller bowl, quickly stir together your olive oil and xanthan gum. Immediately pour it into the soup.
  5. Stir frequently until the soup begins to thicken.
  6. Mix in your bacon bits and cheddar cheese. Serve!

“This recipe is full of wonderful ingredients so we were both looking forward to this. It didn’t disappoint. The pickles gave this a wonderful savory flavor throughout which was complimented by the smooth, creaminess of the sauce. The parsley compliments it, the bacon adds a saltiness to it. If we have one criticism it’s the pickles needing more time to soften, we think. This is a great comfort food. If you are non Keto then a slice of fresh white bread would be just heaven to dip into this…but we won’t mention that on this blog, will we…”
