Which is better for me – egg yolk or egg white?

Using coconut flour

Coconut flour is a delicious alternative to wheat based flour, and gives a taste of sweetness to the dish rather than tasteless white flour. I really enjoy the taste and using it makes me feel less carb-heavy which is a great thing. I was able to purchase this at my local store, thankfully and did not have to go out hunting for coconuts and grinding up their husk to make flour.

Ingredients

  • 6 tbsp butter, melted
  • 1 tsp granulated erythritol sweetener
  • 1 cup superfine almond flour
  • 3 tbsp coconut flour
  • 0.75 tsp salt
  • 0.25 tsp garlic powder
  • 2 tsp baking powder
  • 0.25 tsp xanthan gum
  • 2 eggs
  • 0.5 fresh thyme leaves
  • 0.3333333333 cup unsweetened almond milk
  • 0.5 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Grease or line a standard cupcake pan with 8 muffin cups.
  3. Place the butter in a medium-sized microwave safe bowl.
  4. Microwave on high, uncovered, for 30 seconds or until melted.
  5. Add the sweetener, almond flour, coconut flour, salt, garlic powder, baking powder, xanthan gum, eggs, fresh thyme, almond milk and cheddar and mix well with a fork.
  6. Spoon the batter into the muffin cups, about 2/3 full.
  7. Bake for 22 minutes, or until a toothpick inserted in the center comes out clean.

The garlic and cheese combine beautifully, with a hint of coconut flavor coming through at the end.
