This Keto Apple Slaw recipe is the perfect mix of Waldorf salad and coleslaw. Subbing sour cream for some of the mayonnaise make this keto-friendly by reducing the carbs down to a manageable amount.

Slaw is a type of salad made from shredded raw cabbage and other vegetables, usually mixed with a dressing such as mayonnaise or vinaigrette. It is often served as an accompaniment to barbecue dishes, fried chicken, fish cakes, and sandwiches. Coleslaw is the most popular type of slaw in the U.S., but there are many regional variations depending on what ingredients are used. Carrots, bell peppers, celery, onions and pickles are all common additions to slaw recipes.

Finding the best slaw can be subjective – it depends on personal preference and taste preferences. Some people prefer creamy versions while others prefer more vinegary ones; some like their slaws to contain lots of crunchy vegetables while others prefer a less veggie-heavy version. Generally, the freshest vegetables and locally made dressings are key to making a delicious slaw. Additionally, balancing sweet with salty and acidic flavours is important for creating an enjoyable slaw. Experimenting with different types of vegetables, seasonings, and dressings will help you find the perfect recipe!

Poppy seeds come from the dried seed pods of the poppy flower. It is an ancient ingredient which can typically be found in North Indian, Middle Eastern, and Mediterranean cuisines. Poppy seeds have a nutty flavour and are rich in healthy fats and minerals such as calcium, phosphorus, zinc, magnesium, Vitamin B1 (thiamine), Vitamin B6 (pyridoxine), and dietary fibre. They also contain some protein and antioxidants.

Poppy seeds are quite different from chia seeds, which come from the Salvia hyspanica plant native to Mexico and Guatemala. Chia seeds are rich in Omega-3 fatty acids, dietary fibre, antioxidants, minerals, and contain a high protein content compared to poppy seeds. Compared to other plant-based proteins, chia seeds are considered a complete protein source due to their high levels of essential amino acids like lysine, threonine, isoleucine and methionine. Chia also contains more calcium than poppy seeds. While both poppy and chia seeds are considered to be healthy, nutritious additions to any diet, they do have some differences. It is important to understand the difference between them when you are deciding which to use in your recipes.

Ingredients

  • 3 cups broccoli slaw
  • 1 apple
  • 1 stalk green onion
  • 2 oz pecans
  • 2 tsp poppy seeds
  • 1 tsp apple cider vinegar
  • 0.5 tsp lemon juice
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 tsp salt

Instructions

  1. Grab your broccoli slaw and measure out 3 cups. I made ours with one brocoli stalk and one large carrot.
  2. Shred an apple into the mix. Any apple works here, and about 200 grams of it.
  3. Chop a stalk of green onion as well as some pecans.
  4. Add in your lemon juice, poppy seeds, apple cider vinegar, mayo and sour cream.
  5. You can use all mayo in this recipe, but in order to cut some calories but keep the creaminess, we subbed half of it for sour cream.
  6. Season with some salt and mix very well. Enjoy

“We made our own slaw – one large carrot, one broccoli stalk. This made up around about 3 cups as per the recipe. You may want to adjust the combination of broccoli to carrot, but we didn’t want to use more than one broccoli.

Super simple to make this one. No cooking required. Just some grating, chopping and mixing.

This one is an absolute winner. If we could rate this 6 out of 5 we would. First off, the vinegar is just enough to give you that sharp, mouth watering flavor that kicks out at you and delivers a freshness to this slaw. It brings alive the carrot and apple which blend beautifully together, with the crunch from the pecans and poppy seeds. This one is not only delicious but super healthy. This could be a regular for us in our house.”
