Ingredients

  • 2 tbsp olive oil
  • 2 lbs Italian sausage (hot or sweet) cut into pieces
  • 4 garlic cloves, minced
  • 2 bell peppers, chopped
  • 2 tbsp red wine vinegar
  • 1 cup chopped onion
  • 2 cups water
  • 1 can (28oz) diced tomatoes, use the juice too
  • 0.25 cup fresh parsley, chopped
  • 1 tsp dried basil
  • 4 oz fresh spinach

Instructions

  1. In a skillet cook the sausage until well cooked.
  2. Combine the sausage and all other ingredients, except the spinach and fresh herbs.
  3. Close the lid and let it cook on low for 6 hours.
  4. 5 minutes before you turn off the pot, add the spinach and herbs.
  5. Serve and enjoy! (you can sprinkle with grated cheese.

“Really delicious flavors in this recipe. I would call this a hearty stew not a soup as its so filling. If I wasn’t keto I would dip in crusty white bread but I didn’t need this, it was so satisfying. I loved knowing that by 9 o’clock in the morning I has dinner ready for the evening. The recipe card stated that it served 8. There were four of us for dinner, and we had the leftovers for lunch the following day, and that was spectacular as the flavors had infused further. I would give this stew-soup 5 out 5.”
