I have always seen jerky in the local store as a snack that looks really confusing to cook, as its basically rehydrated for 5 hours.

This recipe from Key For Keto puts jerky “cooking” into perspective. I did not need an expensive re-hydrator, all I needed was my conventional oven at its lowest possible heat for two hours. What materialised was bendy, chewy strips of bacon which satisfied those mid-afternoon/late night cravings.

Jerky is a type of dried, preserved meat that has been stripped of all its fat and cut into strips or cubes. It can be made from almost any kind of meat, but beef is the most common. Jerky is a high-protein, low-fat snack that provides lasting energy. It can be stored for long periods of time and does not require refrigeration. Jerky can be eaten as is or used as an ingredient in other dishes. My brother, who lives in Australia believes that jerky is a healthy alternative to other snacks such as chips or candy bars. Jerky may indeed be healthier than these snacks, but it is important to remember that it is still a processed food. Jerky is high in sodium and other preservatives, so I always tell him it should be eaten in moderation.

Where do cumin, paprika and chilli powder come from?

Cumin, paprika and chilli powder are all spices that originate from different parts of the world. Cumin comes from the Middle East, where it has been used in cooking for centuries. Paprika is a spice that originated in Hungary and is now used in many cuisines around the world. Chilli powder is a spice that is made from dried chilli peppers, wherever chilli is grown, and is used to add heat and flavour to food. These spices are all used in many different dishes from around the world and each one adds its own unique flavour to the dish.

Ingredients

  • 1 tbsp garlic powder
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tbsp chilli powder
  • 1.5 tsp freshly ground black pepper
  • 1 lb uncured center-cut bacon

Instructions

  1. Preheat the oven to its lowest setting, likely between 150°F and 175°F.
  2. In a large bowl, mix the garlic powder, cumin, paprika, chili powder, and pepper.
  3. Add the bacon strips to the bowl and coat them all over with the rub.
  4. Place a few baking sheets on the bottom rack of the oven to catch any fat that renders from the bacon as it bakes.
  5. Lay the bacon directly on the top rack of the oven.
  6. Bake for at least 2 hours; remove the bacon when it reaches your desired jerkiness.

“I am not a huge fan of jerky, this was ok. In my opinion, the outcome was “jerky” meat but it was just too spicy. It kept well in zip lock bags for a week and my husband really enjoyed it as a spicy snack at the times he would usually reach for a bag of potato chips. It’s a 3 out of 5 here, and next time I would change the spice rub. Also, this was listed as a “dinner’ recipe but its actually more like a side or snack.”
