Black Pepper Bacon Jerky

I have always seen jerky in the local store as a snack that looks really confusing to cook, as its basically rehydrated for 5 hours.
This recipe from Key For Keto puts jerky “cooking” into perspective. I did not need an expensive re-hydrator, all I needed was my conventional oven at its lowest possible heat for two hours. What materialised was bendy, chewy strips of bacon which satisfied those mid-afternoon/late night cravings.
Jerky is a type of dried, preserved meat that has been stripped of all its fat and cut into strips or cubes. It can be made from almost any kind of meat, but beef is the most common. Jerky is a high-protein, low-fat snack that provides lasting energy. It can be stored for long periods of time and does not require refrigeration. Jerky can be eaten as is or used as an ingredient in other dishes. My brother, who lives in Australia believes that jerky is a healthy alternative to other snacks such as chips or candy bars. Jerky may indeed be healthier than these snacks, but it is important to remember that it is still a processed food. Jerky is high in sodium and other preservatives, so I always tell him it should be eaten in moderation.

Ingredients
- 1 tbsp garlic powder
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tbsp chilli powder
- 1.5 tsp freshly ground black pepper
- 1 lb uncured center-cut bacon
Instructions
- Preheat the oven to its lowest setting, likely between 150°F and 175°F.
- In a large bowl, mix the garlic powder, cumin, paprika, chili powder, and pepper.
- Add the bacon strips to the bowl and coat them all over with the rub.
- Place a few baking sheets on the bottom rack of the oven to catch any fat that renders from the bacon as it bakes.
- Lay the bacon directly on the top rack of the oven.
- Bake for at least 2 hours; remove the bacon when it reaches your desired jerkiness.
