I don’t drink alcohol as I don’t like the taste or the reminder of hang-overs in my youth. However, stirring 3 teaspoons of whiskey into this as the onion cooked was no issue for me, and I could not even taste it. Onion dip is one of those classic party foods that always seems to disappear quickly. And it’s no wonder why – it’s creamy, flavorful, and oh-so-satisfying.

What is the difference between sour cream and cream cheese?

When it comes to dairy products, there are plenty of choices out there. But when it comes to sour cream and cream cheese, what’s the difference?

For starters, sour cream is made from fermented dairy, while cream cheese is made from fresh dairy. This means that sour cream has a slightly tangy flavor, while cream cheese is richer and more creamy. Texture-wise, sour cream is thicker and has a more “solid” consistency, while cream cheese is smoother and softer. When it comes to usage, sour cream is often used as a condiment or ingredient in dips and sauces, while cream cheese is commonly used as a spread.

Why do onions caramelize so well?

Well, it all has to do with the chemical composition of onions. Onions are made up of two main types of sugar: fructose and glucose. When onions are heated, the sugars begin to break down and caramelize. This process is accelerated by the presence of acid, which is why adding a bit of vinegar or lemon juice to your onion dip can help it brown more quickly.

Ingredients

  • 2 tbsp bacon fat
  • 2 onions, halved lengthwise and cut crosswise into 1/4 inch thick slices
  • 3 tsp whiskey, divided
  • 3 tbsp water, divided
  • 1 cup organic sour cream
  • 0.5 cup organic cream cheese
  • 0.5 tsp sea salt
  • 0.25 tsp garlic powder

Instructions

  1. In a skillet, melt the bacon fat over medium-low heat.
  2. Add the onions to the hot fat and cook for 3 minutes. Use a wooden spoon to break apart any onion pieces still sticking together and continue cooking the onions, stirring every few minutes, for 20 minutes.
  3. When the onions begin to get a little dry and stick to the skillet, stir in 1 teaspoon of whiskey. Alternate adding 1 teaspoon of whiskey and 1 tablespoon of water until you’ve used all the whiskey, then use water as needed.
  4. When the onions are soft, sweet, and very brown, transfer them to a bowl and refrigerate until cold.
  5. In a blender, combine the sour cream, cream cheese, salt, and garlic powder. Blend until smooth and well mixed.
  6. Add the cold onions to the blender, and pulse to achieve your desired consistency. Transfer the dip to an airtight container and refrigerate for at least 1 hour. Stir the dip just before serving.

“Delicious, really tasty and creamy. I dipped my tortilla chips (I know tortilla chips aren’t keto but I couldn’t resist) in this dip as an alternative to humus or salsa. It felt very indulgent, and I will make this again and again, next time to dip cucumber and carrot sticks in. A definite 5 out of 5 for a side dish, not a dinner as the recipe stated.
