I know that any smoothie which lists avocado as an ingredient is going to be super smooth. This recipe from Key For Keto is a smooth operator.

Similar in texture, avocado and coconut go very well together. Their flavours meld and are accented by the coconut flakes in this recipe for an extra-coconutty kick. I actually added a further 1/2 cup of coconut milk as although it was smooth, it was a little too thick for me. Generally speaking, this is a great little recipe and simple to follow.

Always here to inform, so let’s talk Avocados. They grow on trees (yes they do!), and are native to the Americas. The largest producer of avocados in 2022 was Mexico. Who knew? The avocado is an ancient fruit first domesticated by Meso-American tribes more then 5,000 years ago. They are a super source of everything your body needs – I remember reading somewhere many years ago that if you were stranded on a desert island and the only food to eat was avocados, you could survive forever as they contain everything to live.

More useful information – Coconut Flakes!

Coconut flakes, or shredded coconut are rammed full of flavour. Nutritionally they are are a healthy source of fat, fibre, iron and protein. This is a new ingredient for me, so I bought a large pack which I keep in the refrigerator. Coconut flakes will stay fresh for up to six months.

Coconuts are wonderful! Not only do they provide a tasty, refreshing drink, but they have also been used for many different things throughout history. For example, the fibres from a coconut husk were once used to create armour, and it has recently been found that burning the husk creates a great insect repellent at outdoor events. Additionally, the husks have been used to make brushes, doormats, twine, particleboard, and even mattresses and floor tiles.

Ingredients

  • 1 cup crushed ice, divided
  • 1 avocado, peeled and pitted
  • 1 cup unsweetened, full-fat coconut milk
  • 1 tbsp coconut oil
  • 1 tbsp unsweetened coconut flakes

Instructions

  1. In a blender, place 1/2 cup of ice. Add the avocado, coconut milk, and coconut oil. Blend to combine.
  2. Add the remaining 1/2 cup of ice and coconut flakes.
  3. Blend for 1 minute, or until smooth, and serve.

“Thick, gooey, and so wonderfully smooth. If only sore throat medicine tasted like this! Let’s talk flavor. The coconut was dominant, and I actually couldn’t taste the avocado, which Will would say is a good thing as he is not a fan of avocados. But rest assured, it’s in there doing its healthy thing for your body, and delivers a beautifully textured smoothie.”
