I love eggs Benedict for breakfast, lunch or dinner. Before Key For Keto I would present the eggs and the sauce o a carb-heavy muffin, not now, keto uses met and poultry products instead of bread! Anyway, who on earth is Benedict and why are his eggs so well-known?
Eggs Benedict is a classic American dish that has been around since the late 19th century. According to legend, it was created by a stock broker named Lemuel Benedict after he visited New York City’s Waldorf Hotel in 1894. He ordered toast, poached eggs, bacon, and Hollandaise sauce from the restaurant and the result was so delicious it quickly became a popular dish. Over the years, chefs have added their own variations to the dish, such as using Canadian bacon or English muffins instead of toast, and substituting smoked salmon for bacon. Though its exact origins may be lost in time, Eggs Benedict is now an iconic American breakfast staple. Bon appetit!
What is Hollandaise sauce?
Hollandaise sauce is a traditional French sauce, typically served over vegetables, eggs, or seafood. It is an emulsion of butter and egg yolks that has been flavored with lemon juice and seasonings such as salt and pepper. The origin of Hollandaise sauce can be traced back to 17th century France when it was created by the chef to King Louis XIV, Jean-Baptiste Colbert. It was named Hollandaise because it had a Dutch flare and was served with asparagus, which French chefs had recently imported from the Netherlands. Today, Hollandaise sauce is still widely enjoyed in French cuisine. It is also popular in other countries around the world, particularly in the United States, where it is often served over eggs Benedict. Despite its French origins, Hollandaise sauce has become a global favorite of home cooks and professional chefs alike. It’s supposedly easy to make at home with only a few simple ingredients – after a few attempts it is now easy as pie!
How to make Hollandaise
First you will need a ton of patience! I tried this three times on the stove top as I don’t have microwave. I used a bain-marie which is a heat proof bowl resting above a sauce pan of slowly boiling water. Into that I melted my ghee first and then put that aside. Then in a new bowl I put the egg yolks, lemon juice and seasoning. I whisked this for about 3 minutes then removed from the heat and slowly but surely added the melted ghee, whisking ALL THE TIME! Then when it was the right consistency, I added a squeeze of lemon and the paprika and cayenne, voila! If it thickens up while you are poaching eggs, slowly whisk a tiny bit of boiling water in to loosen the Hollandaise.
How to poach the perfect egg?
Poaching an egg is a great way to cook up a healthy breakfast or brunch. It’s also surprisingly easy! Here are the steps for poaching the perfect egg:
- Bring a pot of water to a boil on the stovetop, then lower to medium heat and let it simmer.
- Crack an egg into a small cup or ramekin, being careful not to break the yolk.
- Add a splash of vinegar to the simmering water and stir with a spoon to create whirlpool motion.
- Gently pour the egg into the center of the whirlpool in the pot.
- The egg should quickly start to cook and swirl with the whirlpool.
- After about 2 minutes, you can use a slotted spoon to remove the egg from the pot.
- Place it on a paper towel or plate and season as desired!

Ingredients
- 2 large free-range egg yolks
- 2 tbsp golden ghee, melted
- 1 tbsp lemon juice fresh
- Pinch paprika
- Pinch sea salt
- Pinch cayenne pepper
- 1 tsp white vinegar
- 2 large free-range eggs
- 0.5 cup Spiced Pulled pork, heated through
Instructions
TO MAKE THE HOLLANDAISE SAUCE:
- In a small microwave-safe bowl, gently whisk the egg yolks with the ghee, lemon juice, paprika, salt, and cayenne pepper.
- Microwave the mixture for 20 seconds and then whisk again until the sauce is smooth. Set aside.
TO MAKE THE EGGS BENEDICT:
- Bring a small pot of water to a simmer.
- Add the vinegar to the hot water.
- Crack the eggs into a small bowl, and roll them around lightly so that the whites surround the yolk of the egg. Do not use an egg with a broken yolk.
- Gently pour the eggs into the simmering water and poach them for 3 minutes. Meanwhile, put the heated pulled pork on a plate.
- Remove the poached eggs from the water with a slotted spoon and dry them gently with a paper towel.
- Place the eggs on top of the pulled pork and spoon the Hollandaise sauce over the eggs. Serve immediately.
