Chicken Hash with Dijon Coconut Sauce

This chicken hash recipe is outstanding thanks to the Dijon coconut sauce. Packed with healthy fats and still absolutely delicious.

Ingredients

  • 4 boneless, skinless, chicken breasts, sliced
  • 1 onion, sliced
  • 2 carrots, grated
  • 1 leek, chopped
  • 4 tbsp coconut oil
  • Salt and pepper to taste
  • 0.5 cup ghee
  • 4 tbsp mustard
  • 0.25 cup chicken broth
  • 0.25 cup manna or coconut butter

Instructions

For the Chicken Hash:

  1. Add the coconut oil and chicken in a skillet. Cook sauté until well cooked.
  2. Add black pepper and salt. Set aside
  3. Add additional coconut oil to the skillet, if needed, and stir in the veggies.
  4. Cook until they become tender. Stir in the chicken.
  5. Serve with Dijon coconut sauce.

For the sauce:

  1. Heat the ghee. Add the broth and the mustard.
  2. Cook on low for 5 minutes until the sauce is reduced. Add the coconut butter.
  3. At first, it might seem lumpy but whisk constantly and cook for 5 more minutes.
  4. Season with black pepper and salt. Let it cool.
