This recipe is in three parts and then combined at the last minute. Its keto-friendly but feels indulgent, it does not feel like a diet.

First I made the sauce which was simple except that it did require constant stirring and then whisking over a low heat so it did take patience. Secondly, I cooked the chicken in a few tablespoons of coconut oil. Once cooked  I set them aside, leaving some coconut oil and meat juice in the pan. Thirdly, I softened the vegetables and what a cool tip, grating the carrot so it cooks and softens in the same time as the onion and leek – what a revelation for me! Then I just combined it all together for a creamy stew which satisfied me immensely.

The recipe used coconut butter (or manna) in the sauce, so what is the difference between coconut butter and coconut oil

How to make the perfect sauce

It is critical to keep a watchful eye over your sauce and stir consistently to prevent burning or sticking. Additionally, it is always best to use non-stick utensils when stirring to reduce sticking and burning.

What is hash – not the social media tag…

A hash is a type of dish that uses chopped or shredded meat and vegetables, often served with potatoes. It is traditionally made with beef but can also include pork, chicken, lamb, fish or game meats. The ingredients can be cooked together in a skillet, pan-fried or oven baked. Hash dishes are usually hearty and filling meals that are often served with condiments or sauces. Depending on the recipe, a hash can also be formed into patties and fried for a crispy texture.

There are various regional versions of hash around the world, making it a popular comfort food with many variations. The term “hash” is often attributed to the French verb hacher which means “to chop.” This is why ingredients are usually chopped or shredded into small pieces before they are cooked and served.

Ingredients

  • 4 boneless, skinless, chicken breasts, sliced
  • 1 onion, sliced
  • 2 carrots, grated
  • 1 leek, chopped
  • 4 tbsp coconut oil
  • Salt and pepper to taste
  • 0.5 cup ghee
  • 4 tbsp mustard
  • 0.25 cup chicken broth
  • 0.25 cup manna or coconut butter

Instructions

For the Chicken Hash:

  1. Add the coconut oil and chicken in a skillet. Cook sauté until well cooked.
  2. Add black pepper and salt. Set aside
  3. Add additional coconut oil to the skillet, if needed, and stir in the veggies.
  4. Cook until they become tender. Stir in the chicken.
  5. Serve with Dijon coconut sauce.

For the sauce:

  1. Heat the ghee. Add the broth and the mustard.
  2. Cook on low for 5 minutes until the sauce is reduced. Add the coconut butter.
  3. At first, it might seem lumpy but whisk constantly and cook for 5 more minutes.
  4. Season with black pepper and salt. Let it cool.

We make the sauce first

“Difficult to brown the chicken – check video to see what we mean. Don’t over cook the chicken in your efforts to brown. Succulent moist chicken trumps browned chicken. I have to say this recipe surprised me. I wasn’t too sure what I was cooking. As the recipe went on it the dish started to take shape. I wasn’t sure whether to combine the sauce in the pan or have as an accompaniment. I chose the former, and it didn’t disappoint.

Along with the moist chicken the mustard sauce is the star of the show. It combines beautifully with the vegetable and chicken. Just poor it over, get all gooey, and tuck in to this fab dish. 5 out of 5 stars.
