Ingredients

  • 2 tbsp olive oil
  • 2 lbs Italian sausage (hot or sweet) cut into pieces
  • 4 garlic cloves, minced
  • 2 bell peppers, chopped
  • 2 tbsp red wine vinegar
  • 1 cup chopped onion
  • 2 cups water
  • 1 can (28oz) diced tomatoes, use the juice too
  • 0.25 cup fresh parsley, chopped
  • 1 tsp dried basil
  • 4 oz fresh spinach

Instructions

  1. In a skillet cook the sausage until well cooked.
  2. Combine the sausage and all other ingredients, except the spinach and fresh herbs.
  3. Close the lid and let it cook on low for 6 hours.
  4. 5 minutes before you turn off the pot, add the spinach and herbs.
  5. Serve and enjoy! (you can sprinkle with grated cheese.
