Ingredients
- 2 tbsp olive oil
- 2 lbs Italian sausage (hot or sweet) cut into pieces
- 4 garlic cloves, minced
- 2 bell peppers, chopped
- 2 tbsp red wine vinegar
- 1 cup chopped onion
- 2 cups water
- 1 can (28oz) diced tomatoes, use the juice too
- 0.25 cup fresh parsley, chopped
- 1 tsp dried basil
- 4 oz fresh spinach
Instructions
- In a skillet cook the sausage until well cooked.
- Combine the sausage and all other ingredients, except the spinach and fresh herbs.
- Close the lid and let it cook on low for 6 hours.
- 5 minutes before you turn off the pot, add the spinach and herbs.
- Serve and enjoy! (you can sprinkle with grated cheese.
