Low-Carb Pesto Baked Sea Bass

Seabass is naturally low in fat and high in protein. Using pesto and ghee not only enhances the flavor but also adds healthy fats that make this meal suitable for a keto diet.

Ingredients

  • 4 6-8oz Sea Bass, skin on
  • 12 oz baby tomatoes
  • 2 tbsp pesto
  • 1 tbsp ghee
  • Sea salt
  • 1 tsp fresh ground pepper

Instructions

  1. Preheat the oven to 200 °C/ 400 °F.
  2. Place the sea bass skin side down into a baking dish lined with baking paper.
  3. Season with salt and brush the tops with ghee.
  4. Add a squeeze of lemon and place in the oven for 10 minutes.
  5. Then, remove from the oven and top each of the fillets with 2 tablespoons of pesto (I used my Basil & Macadamia Pesto).
  6. Place back in the oven and bake for another 3-5 more minutes.
  7. Remove from the oven and let it cool down for 5 minutes.
  8. Serve hot with Garlic & Lemon Roasted Broccoli!
