A salad dressed in a really good extra virgin olive oil with a squeeze of fresh lemon juice and a handful of fresh blueberries set of this cooked chicken amazingly.

Ingredients

  • 10 blueberries or other berries
  • 0.25 medium onion, sliced
  • Large bag of salad leaves (approx. 125g)
  • 2 tbsp olive oil
  • 2 tsp fres lemon juice
  • 1 large chicken breast (1/2lb) diced
  • 2 tbsp coconut oil
  • Salt and pepper to taste

Instructions

  1. Sauté the diced chicken breast in 2 tablespoons of coconut oil.
  2. Add salt and pepper to taste.
  3. Toss the cooked chicken with the blueberries, onion slices, salad leaves, olive oil, and lemon juice.
