Ingredients

tbsp avocado oil

onion, chopped

garlic cloves, chopped

lb beef roast (or stew meat), chopped

button mushrooms (white), quartered

bell pepper, chopped

cup beef broth

tbsp smoked paprika

bay leaf

cup tomatoes, diced
Black pepper and salt to taste
Cauliflower rice, cooked
Instructions
Take a large pot. Add the avocado oil and cook the garlic and onion on a medium-high heat.
Add the meat and cook until browned.
Add the peppers and mushrooms. Cook for 5 minutes.
Add the tomatoes, beef stock, smoked paprika and bay leaf. Reduce to a low heat and let it simmer for about 60 minutes. The pot should be partially covered.
Make sure the meat is very tender and the sauce is thickened. If the sauce still needs cooking, increase the heat to high and cook while stirring constantly.
Season with black pepper and salt to taste.
Remove the bay leaf and serve as it is, or with cauliflower rice.
