Using coconut flour
Coconut flour is a delicious alternative to wheat based flour, and gives a taste of sweetness to the dish rather than tasteless white flour. I really enjoy the taste and using it makes me feel less carb-heavy which is a great thing. I was able to purchase this at my local store, thankfully and did not have to go out hunting for coconuts and grinding up their husk to make flour.

Ingredients
- 6 tbsp butter, melted
- 1 tsp granulated erythritol sweetener
- 1 cup superfine almond flour
- 3 tbsp coconut flour
- 0.75 tsp salt
- 0.25 tsp garlic powder
- 2 tsp baking powder
- 0.25 tsp xanthan gum
- 2 eggs
- 0.5 fresh thyme leaves
- 0.3333333333 cup unsweetened almond milk
- 0.5 cup shredded sharp cheddar cheese
Instructions
- Preheat the oven to 375°F.
- Grease or line a standard cupcake pan with 8 muffin cups.
- Place the butter in a medium-sized microwave safe bowl.
- Microwave on high, uncovered, for 30 seconds or until melted.
- Add the sweetener, almond flour, coconut flour, salt, garlic powder, baking powder, xanthan gum, eggs, fresh thyme, almond milk and cheddar and mix well with a fork.
- Spoon the batter into the muffin cups, about 2/3 full.
- Bake for 22 minutes, or until a toothpick inserted in the center comes out clean.
