Fluffy Cauliflower Breakfast

A keto dish which serves 6 for breakfast or lunch, with a touch of spice from the paprika from Key For Keto.
I cooked the dish for 40 minutes according to the recipe instructions, next time I would cook for 30 minutes as the eggs were cooked enough by then and the dish would have been even more moist. The recipe suggested cooking the bacon after preparing the cauliflower, however I put the bacon on to cook whilst I was preparing the cauliflower… two bird with one stone! I also stirred the cooked bacon into the egg and cauliflower mixture as I was worried the bacon would burn being on the top for 40 minutes.

The cauliflower plant consists of stem, stem leaves and the curd (the head of the cauliflower). I tend to only grate the curd and not the steam of the cauliflower, as this seems to trap lots of water and could ruin the consistency of the recipe.

Ingredients
- 1 head of cauliflower, large
- 8 bacon slices
- 9 large eggs
- 1 cup of whole milk
- 2 garlic cloves, minced
- 2 tsp of paprika
- 2 cups cheddar, shredded
- 3 green onions, sliced
- Black pepper and salt to taste
Instructions
- Preheat the oven to 340 F.
- Grate the cauliflower.
- Spread over a baking dish.
- Cook the bacon over medium heat. And transfer on a plate lined with paper towel to drain the excess fat.
- In a bowl whisk the milk, eggs, garlic and paprika, then season with black pepper and salt.
- Sprinkle the cauliflower with cheddar, green onions (reserve some), bacon and pour the egg mixture.
- Bake for 40 minutes until the eggs are well cooked.
- Garnish with green onions. Serve and enjoy
