Buffalo Chicken Strips on a keto diet, really? Yes, say the team at Key for Keto.

Buffalo chicken is a popular dish which consists of chicken cooked with hot sauce and butter. It often includes other ingredients as well, such as blue cheese or ranch dressing. The name “buffalo” refers to the city of Buffalo in New York where it was first created in the 1960s. Despite its name, buffalo chicken does not actually contain any buffalo meat. It is traditionally made with chicken which is fried or baked, and coated in a hot sauce-butter mixture. The dish is commonly served as an appetizer or as part of a meal, often accompanied by celery sticks and ranch dressing. Buffalo chicken can also be served in wraps, sandwiches and salads. The spicy and savoury flavours of buffalo chicken make it a popular dish for people of all ages.

Paprika and chili powder

Paprika and chili powder are two spices frequently used in many dishes. Both have different levels of spiciness. So paprika is made from dried ground peppers and can range from mild to spicy, depending on the type of pepper used, while chili powder is a combination of various spices, including paprika, cayenne pepper, garlic powder, cumin, and oregano. As a result, chili powder is usually spicier than paprika. Both spices are popular in Mexican and Indian cuisine and originated from different parts of the world. Paprika is originally from Europe (specifically Spain and Hungary), while chili powder is developed in Mexico. Both spices are used to add flavour and a bit of heat to dishes. Paprika is used more for its savoury colour, while chili powder is used more for its spiciness.

Adding some olive oil at the end…

When the chicken has been baked, I drizzle with the remaining oil to ensure they do not dry out when I put back under the grill.

Ingredients

  • 5 chicken breasts, pounded to 1/2 thickness
  • 0.75 cup almond flour
  • 0.5 cup hot sauce
  • 0.25 cup olive oil
  • 3 tbsp butter
  • 3 tbsp blue cheese crumbles
  • 2 large eggs
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat oven to 400F.
  2. In a ramekin, combine paprika, chili powder, salt, pepper, garlic powder, and onion powder.
  3. Pound out chicken breasts to ½” thickness, then cut the chicken breasts in half.
  4. Sprinkle 1/3 of the spice mix over the chicken breast then flip them over and do the same with 1/3 of the spice mix.
  5. In a bowl, combine almond flour and 1/3 of the spice mix.
  6. In another container, crack 2 eggs and whisk them.
  7. Dip each piece of seasoned chicken into the spice mix and then into the almond flour. Make sure each side is coated well.
  8. Lay each piece on a cooling rack on top of a foiled baking sheet.
  9. Bake the chicken for 15 minutes. Take the chicken out of the oven and turn your oven to broil. Drizzle 2 Tbsp. olive oil over the chicken.
  10. Broil for 5 minutes, flip the breasts, drizzle with remaining olive oil, and broil again for 5 minutes.
  11. In a sauce pan, combined ½ Cup of hot sauce with 3 tbsp. butter.
  12. Serve chicken with slathering of hot sauce and blue cheese crumbles.

“This recipe is fantastic. Things you need to know. We cooked as per the recipe instructions but the chicken was on the cusp of being over cooked. It wasn’t, but may we would reduce cooking time slightly next time.

 

This one is spicy. So avoid if you do not like hot food. We loved this, we Will did. He gave this 5 out of 5. It’s a must with the blue cheese. This makes the dish.”
