This Almond Kale Smoothie tastes delicious, like creamy marzipan.
The words almond and kale sound so healthy. Kale has a rich, savory flavor, while almonds are light and sweet. The recipe says to blend in two stages. Looking at the recipe this is to blend the coconut oil before adding the almond flour. I used the Nutribullet for this recipe. I find that the Nutribullet can cope with all types of ingredients and in particular, cuts through the almond flour without building up on the blades.

Kale is a supercharged vegetable, full of vitamin C and vitamin A, both of which are important for general health, whatever your age. It is worth nothing that kale grows like a long cabbage leaf and its stem is really tough. Make sure you remove the stem before you blend so you just get the tasty leaves.
What are the benefits of Almond in a Keto diet?
Almonds are a keto-favourite food due to their high-fat but low protein content. I used ground almonds bought from a store. Most stores now tend to stock almond flour, or ground almonds, in the baking aisle. It’s become much more popular as a substitute to old fashioned flours.
This recipe calls for almond milk and almond flour. If your local store does not sell these items, both can be made from almonds. To make almond flour, simply grind up a cup of almonds in a food processor or blender, until you achieve the consistency you require – think fine like a wheat flour.
To make almond milk, soak a couple of cups of almonds overnight in filtered water. In the morning, drain the almonds in a fine sieve or muslin cloth. Add the drained almonds to a food processor with 2 cups of water to every cup of drained almonds. Once blended, I would strain through a sieve or muslin cloth to further ensure the almond milk is completely sleek and polished.

Ingredients
- 1 cup crushed ice, divided
- 1 cup unsweetened almond milk
- 1 cup kale
- 1 tbsp coconut oil
- 2 tbsp almond flour
- 0.5 tsp almond extract
Instructions
- In a blender, place 1/2 cup of ice. Add the almond milk, kale, and coconut oil. Blend to combine
- Add the almond flour, almond extract and remaining 1/2 cup of ice.
- Blend for 1 minute, or until smooth, and serve.
